Sunday is meal prepping day in the Curry household. We make a weeks worth of lunches and dinners. In addition to making some tried and true recipes I wanted to try a new one. I wanted to make Baked Sweet Potato Chips because everyone needs delicious go-to snack. These may appear “bad” at first sight since they are a chip but in reality they are super healthy and easy to make. They only consist of 4 ingredients and time in the oven. It’s a win-win. They are super healthy and easy to make! Not to mention gluten free, dairy free, Whole30, Paleo and most importantly for our household AIP (Auto Immune Protocol). Baked Sweet Potato Chips
INGREDIENTS
For Sweet Potato Chips
- 3 medium sweet potatoes thinly sliced
- 3 1/2 Tablespoons extra virgin olive oil + more for brushing
- salt
- pepper if desired
INSTRUCTIONS

Preheat oven to 350°. Scrub sweet potatoes and thinly slice. (The best methods are either a food processor with slicing blade or a mandoline.)

In a medium sized bowl combine olive oil and sweet potatoes. Stir to combine and coat evenly.

Line 2 baking sheets with parchment paper. Very lightly brush olive oil on parchment.

Arrange sweet potato slices evenly on baking sheets. Sprinkle generously with salt and pepper (if desired). Bake 20 minutes. Flip sweet potatoes and rotate pans. Bake another 15 to 20 minutes or until desired crispness.

Remove and cool on paper towels. Repeat with any remaining sweet potato slices.

Store in an airtight container. Will last several weeks.
